Le bon fonctionnement des organismes vivants nécessite de contrôler les facteurs qui déterminent le niveau de stress oxydatif dans le système, à savoir la présence de radicaux libres à un niveau donné, plutôt bas, et empêchant leur excès. Dans ce travail, il est montré que les antioxydants actifs SA et AA, qui régissent le stress oxydatif dans la plaie, modifient la solution de sérum standard et brûlent les escarres nécrotiques affectées au niveau de la structure moléculaire. Dans le cas de l'incubation de fragments de peau en SA et AA, les résultats suivants ont été rapportés: modification du sérum, c'est-à-dire l'apparition de bandes d'oligomères de bas poids moléculaire dans AA et la recréation de bandes de sérum natives dans SA. Des solutions de sérum congelées modifiées par des bandes AA FTIR 1759 et 1420-1053 cm (-1) sont observées, tandis que des bandes SA FTIR 1603, 1411-1054 et 536 cm (-1) apparaissent. En cas de modification de la brûlure affectée par les escarres nécrotiques en SA et AA - les décalages de fréquence dans la région des empreintes digitales entre 1780 et 1 000 cm (-1) peuvent être des biomarqueurs indiquant un processus de régénération des tissus sous l’action des antioxydants. Les régions 1780-1580 cm (-1) et 1418-1250 cm (-1) des spectres Raman sont particulièrement riches en informations spectrales. La modification des échantillons de peau brûlée avec AA active les régions des agrégats de feuille bêta tandis que le traitement des échantillons avec de l'ascorbate SA démontre des modifications qui témoignent de la reconstruction de la structure de l'hélice alpha (études SAXS).
