Les cosses de cacao ont été utilisées comme source pour l'extraction de la pectine par traitement à l'acide sucré. Un plan factoriel complet a été appliqué pour examiner les variables indépendantes qui influent sur le rendement et la teneur en acide uronique. La méthodologie de surface de réponse (RSM) a été suivie à l'aide d'une conception composite centrale afin d'optimiser les conditions d'extraction. La condition d'extraction optimisée a été notée pH 2,5 / 95 ° C / 45 min. Le rendement et la teneur en acide uronique de la pectine extraite ont été déterminés respectivement à 4,2 ± 0,12% et à 74,5 ± 0,3%. La pectine extraite s'est avérée être une pectine à faible teneur en méthoxy (pectine LM) avec un degré d'estérification (DE) de 8,1%. Les solutions de pectine ont montré un comportement d’amincissement par cisaillement qui a été expliqué par le modèle de Williamson. Ce travail promeut une technologie respectueuse de l'environnement pour l'isolation de pectine.
