Les réactions d’oxydation sont devenues le principal obstacle au développement des produits dérivés de l’hémoglobine bovine. Ici, les effets de la vitamine C (Vc), un réactif antioxydant naturel facilement disponible, sur la réaction redox de l'hémoglobine bovine ont été systématiquement étudiés par formation de méthémoglobine (MetHb) et analyse spectrophotométrique et contrôle d'affinité de l'hémoglobine par l'oxygène. Les résultats ont montré que Vc présentait des effets antioxydants au stade initial de la réaction et pouvait ensuite accélérer la teneur en MetHb en augmentant la production de peroxyde d’hydrogène, ce qui peut être indirectement caractérisé par la formation de choleglobine dans les réactions secondaires suivantes. Les effets doubles de Vc, notamment les effets antioxydants et pro-oxydants, pourraient être confirmés par l'analyse spectrophotométrique par spectres dans cette recherche. Les résultats de cette recherche ont permis de mieux comprendre les propriétés rédox de l'hémoglobine bovine et ont également révélé le principal obstacle à l'exploration de l'application de Vc dans le développement futur de produits dérivés de l'hémoglobine bovine.
