L’imprégnation à haute pression (HPI) est une nouvelle technique pour infuser les fluides souhaités dans des biomatériaux poreux. Dans cette étude, l’effet de 24 traitements de combinaison pression-temps différents a été étudié: temps de montée (0 à 6 min), vitesse de pressurisation [100, 150, 200, 300 (MPa / min)] et temps de maintien de la pression (0- 30 min) à 100, 300 et 600MPa. Des expériences ont été réalisées sur la base de HPI de l'acide ascorbique (AA) sous forme de fluide newtonien aqueux à faible viscosité (1%). La perfusion de AA a atteint 215 à 250 mg / kg lorsque la pression de service de 200 MPa a été atteinte, quel que soit le taux de pressurisation ou le temps de montée. Un modèle pour l'ensemble du processus a été développé, qui repose sur la combinaison d'une cinétique de premier ordre pendant le temps de montée et d'un processus de diffusion linéaire pendant le temps de maintien de la pression. De plus, l'imprégnation de chitosane (CH) à 0,5%, 1%, 2% et 4% dans des cubes de pomme, en tant que fluide vecteur non newtonien de haute viscosité, a montré une tendance quadratique pour l'absorption de CH. De plus, le prétraitement HPI avec CH avant la congélation a montré une réduction significative de la dégradation de la texture et de la perte de gouttes dans les cubes de pomme congelés et décongelés. Enfin, des études microstructurales ont également été réalisées et les images microscopiques ont montré une progression des voies d'écoulement perpendiculaires au niveau des couches périphériques ainsi que certains réarrangements cellulaires.
