L'effet de l'homogénéisation à haute pression (HPH) sur les propriétés physiques et bioactives du nectar d'églantier a été étudié. Le nectar de cynorrhodon a un problème de sédimentation en attendant sur le marché pendant la vente. Pour résoudre ce problème, les nectars ont été passés 1, 2 et 3 fois à travers des pressions de 75, 100 et 125MPa. La taille moyenne des particules diminuait à mesure que la pression et le nombre de passes augmentaient (p <0,05), tandis que le potentiel zêta ne changeait pas (p> 0,05). Des images microstructurales ont révélé que le traitement par HPH perturbait les cellules et entraînait la libération de matériaux cellulaires dans le sérum. Le traitement HPH a augmenté les valeurs de DeltaE (de 2,48 à 6,03). Les échantillons traités par HPH n'ont montré aucune sédimentation pendant 15 jours de stockage. Tous les échantillons ont montré un comportement d'amincissement au cisaillement et ont été caractérisés comme un réseau de gel faible (G '> G' '). Les résultats obtenus avec les traitements HPH ont eu pour effet de réduire la teneur totale en composés phénoliques et en acide ascorbique en raison de la hausse des températures de sortie du produit. Cependant, la capacité antioxydante des nectars a augmenté après le traitement en raison de la hausse de la teneur totale en caroténoïdes. Cette étude a indiqué que le traitement HPH pourrait résoudre le problème de la sédimentation au cours de la durée de vie en affectant le moins possible les propriétés bioactives et physiques du nectar d'églantier.
